The properties and usage characteristics of capsaicin are inseparable from its composition. Capsaicin from chili peppers is a carotenoid pigment. The composition of capsaicin is complex, and the main components are capsaicin, capsaicin yucca, and R-carotene. Due to the difference of chili pepper varieties and chili pepper maturity, the content of paprika red pigment in chili pepper is different, and the composition of paprika red pigment is also different. Different chili varieties contain different components of paprika red pigment, and generally the quality of paprika red pigment is higher in chili peppers with good maturity. In production, the peppers from which the paprika red pigment is extracted are the ones with higher maturity.
